Job Overview

Step into a fast paced, high profile kitchen at the heart of our golf course. This is an exciting opportunity to take ownership of day to day food preparation, lead and inspire Kitchen Porters and Commis Chefs, and play a key role in driving performance.

Working closely with the Head Chef, you will balance creativity with commercial focus – controlling food costs to budget, developing revenue and expense plans, and delivering outstanding quality and customer experiences that maximise sales and profitability.

Responsibilities

• Attend work in correct uniform, at correct rostered time.
• Complete all food preparation for all catering outlets, including bar/lounge, snack bar, on‑course sales and function suite.
• Work alone or as part of a team and meet all standards for performance, appearance and service provision.
• Maintain existing food programmes and develop new concepts and strategies to ensure the highest possible quality of food and service, meeting customer expectations and encouraging repeat business.
• Ensure relevant records such as temperature sheets and food labelling are kept up to date.
• Enforce and implement all policies and procedures related to the operation of the Food and Beverage department, including personnel management, sanitation, food preparation, storage and health and safety.
• Implement and maintain effective inventory and shortage controls, ensuring adequate inventories are maintained and proper storage is provided.
• Review all bookings for catered activities, such as banquets, meetings, weddings and societies.
• Collaborate with other departments to ensure operational efficiencies.
• Comply with BGL personnel policies and health and safety procedures.
• Undertake any further duties as requested by management.
• Meals on duty; uniforms provided.
