Job Summary
The Courtyard by Marriott Hotel Sandy Park in Exeter, opened in 2022, is a 250‑bedroom property situated next to the Exeter Chiefs Rugby Stadium. It offers two distinct culinary experiences: a roof‑top restaurant and bar called The View, and a relaxed Kitchen & Bistro on the third floor. The hotel accommodates business guests, meetings, and events, and hosts elite sports teams and bespoke celebrations.
Responsibilities
- Have all‑round expertise in casual dining
- Banqueting experience from 10‑200 guests; no two days are the same
- Passionate about fresh local ingredients
- Understand food waste and use all ingredients efficiently
- Personally run the pass and produce all menu elements when required
- Lead staff and manage all food‑related functions throughout the hotel
- Work to continually improve guest and employee satisfaction
- Guide and develop the Kitchen & Bistro team
- Manage food cost and maintain profit margins
- Create menus for various event styles
- Adapt to work across all hotel areas (K&B, M&E, The View, Breakfast)
- Supervise all kitchen areas to ensure consistent, high‑quality production
- Ensure sanitation and food standards are achieved
- Oversee all food preparation and support all areas
- Review staffing levels to meet guest service, operational, and financial objectives
Qualifications
- High school diploma or GED
- Minimum 4 years of experience in culinary, food and beverage, or a related professional area
