As our Food Safety & Compliance Lead, you’ll play a key role in protecting the integrity of our menus, our suppliers, and the experience we deliver to every guest. From food safety and allergen management to supplier standards, this is a hands‑on role at the heart of the business, making sure everything is delivered consistently and to the level we’re known for across every site.
Key Responsibilities
Own Allergen & Nutritional Accuracy
- Approval of raw ingredient allergen and nutritional information.
- Ensure all product specifications are accurate and filed/stored correctly.
- Keep guest‑facing online ingredient lists, allergen data, and nutritional information accurate and up to date.
- Support with HFSS calculations when required.
- Ensure all recipe specifications are compliant, clear, and aligned with brand standards.
- Work closely with teams to roll out updates quickly and accurately.
- Maintain high data integrity and consistency across the estate.
- Review and approve supplier documentation and maintain accurate certification records.
- Challenge, query, and ensure suppliers meet our food safety standards.
- Keep supplier records organised and audit‑ready at all times.
- Ensure any third‑party audits of suppliers are completed in line with agreed terms.
- Visit suppliers and support with audits and investigations.
Handle Incidents & Protect the Brand
- Take the lead on food poisoning allegations, ensuring they are handled professionally, thoroughly, and in line with legal and company requirements.
- Manage food safety supplier complaints from start to resolution.
- Track, elevate, and close out issues effectively.
Coordinate Sampling & Testing
- Organise product sampling and testing programmes.
- Investigate and follow up on any issues identified.
Skills & Experiences
Experience in a food safety, compliance, or quality role within hospitality or food service.
Strong working knowledge of Comtrex.
Food Technology / Science Qualification (desirable).
Level 3 Food Safety or equivalent (essential).
Level 3 Health & Safety (desirable).
Solid understanding of allergen management, HACCP, food safety legislation and microbiology food standards.
Highly organised with exceptional attention to detail.
Confident communicator who can work with all shareholders.
Able to manage multiple priorities in a fast‑paced environment.

Location: Based at The Ivy Collection Development Kitchen in Acton, London, with regular restaurant visits.
