Deputy General Manager – Cold Town House, Edinburgh

Set in the heart of Edinburgh’s iconic Grassmarket, Cold Town House is one of Scotland’s most exciting, high-volume hospitality venues, and we’re looking for a Deputy General Manager ready to step into a big, fast‑paced operation and make a real impact.

This is a large‑scale, multi‑floor venue with serious pace, complexity, and expectation. Craft beer brewed on‑site, a high‑output Neapolitan pizza kitchen, live entertainment, and one of the most in‑demand rooftop terraces in the city, all under one roof.

You’ll work directly alongside the General Manager to lead the operation, develop the team, and help drive performance across every part of the business.

You’ll be at the heart of one of our flagship venues, supporting the GM while taking real ownership of the day‑to‑day operation. This means:

This role is ideal for a strong existing high‑volume DGM or a General Manager from a smaller venue ready to step into a bigger operation and grow with the company.

Your Role

Operational Support – Support the GM in delivering a smooth, high‑performing operation across all floors.

Team Leadership & Development – Lead from the front. Coach, develop and motivate the team to deliver their best.

Financial Performance – Support with cost control, labour management, and delivering against budget.

Guest Experience – Drive high standards on the floor, ensuring every guest has a great experience.

Compliance & Standards – Ensure all procedures, policies, and legal requirements are consistently met.
