The ability to produce top quality dishes from scratch, sometimes at volume
The confidence and knowledge to help guide junior members of the kitchen
The motivation to work towards a position of increased responsibility
good hygiene awareness and able to manage consistency
good organisation/communication skills
recent experience at recognised all fresh, rosette level establishments as Chef de partie
