Recreating the tension of the show's famed red and blue open kitchens diners witness the precision and intensity behind every dish, as well as a contemporary bar showcasing the latest trends in mixology. The menu features signature, show-inspired creations such as the legendary Beef Wellington, Pan-Seared Scallops, and Sticky Toffee Pudding, each prepared with the same passion and perfection expected from the show's world-class chefs.

What you'll be doing
In this pivotal role, you'll combine culinary vision with operational discipline to ensure the restaurant consistently delivers on its goals. You will:
Lead and inspire the kitchen brigade, motivating them to deliver outstanding food and exceptional service at every service
Oversee the daily kitchen operation, ensuring all dishes consistently meet restaurant and brand standards
Collaborate with GRRG on seasonal, creative dishes that delight our guests
Develop and nurture your team through structured training, appraisals and mentoring, creating a culture of growth and excellence
Manage food stock ordering and controls within budget, ensuring efficient cost management
Work closely with the management team to meet sales, labour and food cost targets
Ensure full compliance with health, safety and food hygiene legislation, creating a safe and efficient kitchen environment
Take ownership of staff onboarding, training and retention, ensuring every team member feels part of something extraordinary
Collaborate with front-of-house colleagues to ensure a seamless guest journey and an exceptional dining experience
What you'll bring
We are seeking a Head Chef with both creativity and commercial acumen – someone who thrives in a high-profile, fast-paced environment. You will bring:
Proven experience as a Head Chef in a premium high-volume quality restaurant
An uncompromising approach to achieving food quality, consistency and presentation standards
Strong leadership skills, with the ability to inspire and mentor a team to deliver their very best
Solid financial awareness with experience managing budgets, food margins and labour costs
Excellent organisational skills, with the ability to plan for future needs while managing day-to-day operations
A deep understanding of seasonal produce, food trends and guest expectations
A calm, decisive presence under pressure, with the confidence to lead service at the highest level
Strong communication skills with the ability to liaise effectively with GRRG team, Hotel & Restuarant Management and the wider HK Restaurant team
