Most recently opened the acclaimed Poon’s at Somerset House.Head Chef Opened the acclaimed Canal in late 2025. Before that, he was at The Humo (Michelin one star). His career also spans Chiltern Firehouse, Smokestak, and formative time at The French Laundry.Sous Chef Former Head of Bakery at Oma and Agora.This is a rare opportunity to work directly under and learn from chefs who have run kitchens at that level.
THE ROLEYou’ll work across our kitchen sections, contributing to a menu that applies serious classical and contemporary technique to Georgian food.No prior knowledge of Georgian cuisine is required. Curiosity and discipline matter far more we’ll teach you everything else.
