Prep Shift Supervisor (Nights)

Location: Nottingham – Riverside Bakery

Hours: Wednesday – Friday (Night Shift) | 5pm – 5am

Salary: £43,927 per annum

The purpose of the Prep Shift Supervisor role is to lead and support the night shift preparation team, ensuring the safe, efficient and compliant preparation of raw materials in line with production requirements, food safety standards and customer expectations. The role is responsible for maintaining high standards of hygiene, allergen control, traceability and GMP compliance, while driving team performance, operational efficiency and waste reduction within a fast‑paced food manufacturing environment.

Key Duties, Responsibilities & Accountabilities

Food Safety, Quality & Compliance

  • Ensure strict segregation of raw ingredients to prevent cross‑contamination, with particular focus on the UK’s 14 major allergens.
  • Maintain and enforce BRCGS, HACCP and site hygiene standards across all preparation activities.
  • Monitor prep room temperatures and carry out regular compliance and hygiene audits.
  • Verify batch codes, lot numbers and use‑by dates on all incoming ingredients to ensure full product traceability.
  • Ensure all preparation activities are carried out in line with GMP (Good Manufacturing Practice) requirements and company procedures.

Team Leadership & Shift Management

  • Lead, supervise and support the prep team during the night shift operation.
  • Coordinate shift rotas, allocate daily tasks and manage attendance across the team.
  • Ensure all team members are fully trained in food safety, allergen awareness, manual handling and equipment operation.
  • Conduct regular 1‑to‑1 meetings, monitor team performance and provide clear, constructive feedback.
  • Drive high standards of performance and accountability across the department.

Operational Efficiency

  • Ensure all raw materials are accurately scaled, weighed and prepared in line with daily production schedules and specifications.
  • Monitor ingredient usage, manage stock rotation and support initiatives to minimise food waste.
  • Carry out pre‑start checks on preparation equipment including slicers, dicers and mixers, escalating maintenance issues promptly where required.
  • Support continuous improvement activities to enhance efficiency, reduce downtime and maintain operational standards within a fast‑paced manufacturing environment.

Knowledge, Skills and Experience

  • Previous experience in a supervisory or team leader role within food manufacturing, FMCG or a fast‑paced commercial food production environment.
  • Level 2 or Level 3 Food Safety in Manufacturing certification.
  • Level 2 or Level 3 HACCP certification.
  • Strong understanding of GMP, food safety and allergen management procedures.
  • Excellent communication and team leadership skills, with the ability to work effectively across departments and shift teams.
  • Good basic IT skills, including the ability to complete reports and maintain accurate records.
  • Strong attention to detail and a proactive approach to maintaining high operational standards.
  • Comfortable working within fast‑paced, temperature‑controlled or chilled production environments.
