Overview
An exciting opportunity has arisen for a talented and ambitious Chef de Partie to join the brigade of an award-winning fine dining restaurant situated within a prestigious country estate in Hertfordshire.
This position is exclusively based within the estate’s flagship fine dining restaurant, which focuses on exceptional seasonal ingredients, creative menus, and refined à la carte dining. Working within a close-knit team of just five chefs, you will play a key role in delivering consistently high standards while continuing to develop your culinary skills.
This role would suit a Chef de Partie looking to progress their career within a quality-driven kitchen environment. Candidates should possess a strong background in fresh food operations and demonstrate a genuine passion for seasonal, ingredient-led cooking.
The Role
The restaurant offers an inventive and evolving menu built around the finest seasonal produce. You will be involved in all aspects of food preparation and service, working closely with an experienced Head Chef and Senior Sous Chef to maintain exceptional standards throughout service.
Hours are predominantly afternoon and evening based, with most shifts starting in the early afternoon and finishing around 10:00pm.
Key Responsibilities
- Running and maintaining your designated section during service.
- Preparing and cooking high-quality à la carte dishes.
- Working with fresh, seasonal and locally sourced ingredients.
- Assisting with menu development and daily specials.
- Maintaining exceptional food presentation standards.
- Ensuring all food safety and hygiene standards are consistently met.
- Supporting junior team members where required.
- Contributing positively to a small, professional kitchen brigade.
Key Requirements
- Previous experience as a Chef de Partie within a quality restaurant environment.
- Strong fresh food and à la carte cooking skills.
- Experience working with seasonal ingredients.
- Passion for producing high-quality dishes with attention to detail.
- Ambition to progress within a professional kitchen environment.
- Stable employment history demonstrating commitment and progression.
- A progressive career background within reputable establishments.
- Ability to thrive within a small team and maintain high standards under pressure.
Please note that this position is best suited to chefs who have built their experience through permanent positions within quality kitchens. Candidates whose recent experience consists primarily of temporary or agency assignments may not be suitable for this particular opportunity.
