Restaurant Manager

Salary: €42,500 – €45,000 DOE

About the Role

We are seeking an experienced Restaurant Manager to lead the restaurant and wine service operations at a renowned hotel in The Burren. This is an exciting opportunity for a hospitality professional with strong leadership skills, excellent wine knowledge, and a passion for delivering outstanding guest experiences.

Key Responsibilities

  • Oversee the daily operation of the restaurant, ensuring exceptional service standards.
  • Lead, motivate, train, and develop the front-of-house team.
  • Work closely with the Head Chef and management team to ensure seamless service.
  • Manage reservations, table planning, staffing schedules, and guest relations.
  • Ensure compliance with food safety, health & safety, and licensing regulations.
  • Assist with budgeting, stock control, cost management, and financial performance.
  • Resolve guest feedback professionally and maintain the hotel’s reputation for excellence.
  • Lead by example with a hands-on approach and strong attention to detail.

Wine Responsibilities

  • Develop and manage the restaurant’s wine programme.
  • Advise guests on wine selections and food pairings.
  • Train the team in wine knowledge, service standards, and upselling.
  • Manage wine inventory, supplier relationships, and stock rotation.
  • Ensure excellent wine storage, presentation, and service standards.

Essential

  • Minimum 3 years’ experience as a Restaurant Manager or senior supervisor within a quality hospitality environment.
  • Strong wine knowledge, including service, cellar management, and food pairing.
  • Excellent leadership, communication, and organisational skills.
  • Financial awareness with experience managing budgets and costs.
  • Passion for hospitality and delivering exceptional guest experiences.
  • Flexibility to work evenings, weekends, and public holidays.

Desirable

  • WSET Level 2 or 3 (or equivalent).
  • Experience in luxury hotels, fine dining, or Michelin-recognised restaurants.
  • Knowledge of Irish and international wines.
  • Experience with restaurant reservation and POS systems.
