Responsibilities* Running all aspects of kitchen operation in the Head Chef’s absence.* Training and motivating your staff.* Keeping up to date with food safety legislation, liaising with the authorities and taking overall legal responsibility for the premises.* Enforcing health and safety rules.* Supervising all food preparation and presentation to ensure quality and restaurant standards.* Managing stock and product ordering, maintaining detailed records and minimising waste. Requirements:* Proven experience as Sous Chef* Exceptional proven ability of kitchen management* Ability in dividing responsibilities and monitoring progress* Outstanding communication and leadership skills* Good understanding of useful computer programs (restaurant management software, POS)* Exceptional understanding of hygiene and safety requirements and systems.* Credentials in health and safety training.
